Cameo Healthy Dinners

Ingredients

The Cameo Main Course Base

Half a Cameo apple peeled and diced

Four cherry tomatoes

One small onion

One medium sized bell red pepper

2 teaspoons olive oil

Option 1

One large clove of garlic

Sprinkle of fresh basil

60g baguette

Option 2

56g of lean white fish

Cumin, paprika, fresh coriander, cinnamon

One clove of garlic

Half a Cameo apple as above

Option 3

56g of tofu

Half a teaspoon of curry powder

Black Pepper

Option 4

One medium carrot thinly stripped

40z (112g) Bean sprouts

5 sliced button mushrooms

2 teaspoons sesame oil

Chinese 5 spice

Method

Option 1: Fry the apple, tomato, pepper and onion in the olive oil this is your ‘Cameo Main Course Base’. Add garlic to taste. When almost cooked, add the fresh basil and then serve the pan mixture on top of a 60g baguette.

Option 2: Alternatively, poach 56g of lean white fish with water until cooked. Add your Cameo Main Dish base, plus a pinch of cumin, a pinch of paprika, some fresh coriander and a pinch of cinnamon.  As above add garlic to taste.  Add the remaining half of the cameo apple, diced and cook until its nicely brown and is coated with the spices.

Option 3: Into a frying pan, place 2oz of tofu with one teaspoon of olive oil. Once thoroughly cooked through, add your Cameo Main Dish base. Add in half a teaspoon of curry powder or alternatively, add a pinch of ground cumin, pinch of ground coriander, pinch of turmeric, and a pinch of ground ginger (or any combination) and black pepper. You might want to add a tiny amount of mustard, as you prefer.

Option 4: Into a frying pan, place bean sprouts (a good handful)  thinly stripped sections of carrot (small carrot), 5 sliced medium button mushrooms. Add your Cameo base.
Add a teaspoon of sesame oil. Add Chinese 5 spice (or a pinch of ground star anise, ground fennel  seeds, ground cloves, white pepper and salt.
