Apple Chicken Salad

4 chicken breasts, poached and shredded

3 Cameo® apples, diced

50g golden raisins

50g pine nuts. toasted

handful fresh basil, chopped

120ml mayonnaise

1 tsp. lemon juice OR cider vinegar

1 tsp. salt

1/2 tsp. ground pepper


  1. Combine chicken, apples, raisins, pine nuts and basil in large bowl.
  2. Combine mayonnaise, lemon juice, salt and pepper in small bowl; stirring well with a whisk.
  3. Add mayonnaise mixture to chicken mixture, tossing well to coat.

* Substitution: Remove skin from 1 rotisserie chicken. Pull light and dark meat off bone; separate into shredded pieces. Place in bowl; proceed with recipe as directed.

Serve as a salad or use as a filling in a wrap or flatbread
